Had some whole grain pasta elbows I need to use. Some bacon and mushrooms, bingo, this is the result. Pretty easy, doesn't take too long. Only 2 pots used and needed cleaning.

Had some whole grain pasta elbows I need to use. Some bacon and mushrooms, bingo, this is the result. Pretty easy, doesn't take too long. Only 2 pots used and needed cleaning.

Ingredients

  1. 16 oz.pasta (less of whole grain)
  2. 10 slicesthin slice bacon (give or take)
  3. 8 oz.button mushrooms
  4. 1 tsp.Italian seasoning
  5. 1/4 cupgrated parmesan cheese

    When the bacon mushrooms are done, you need your hot cooked noodles (to package instructions), so start your water to a boil so you can have your noodles done on time.

    Slice your bacon into about 1/2 inch pieces.

    Put bacon in a pot to get it cooking, about medium high. Stir frequently.

    Cut your mushrooms into whatever size you like. I like larger pieces, so that is what you will see.

    When the bacon is about half cooked, add the mushrooms. For my bacon that was about 5 minutes. Stir frequently.

    Since this is an oil based sauce, I left about 3 tbl. grease/oil in the pot.

    The bacon should be cooked, but not crispy. Turn the heat off. Add your Italian seasoning, grind some black pepper, give it a good stir.

    Dragon you pasta when cooked. Add it back to your pasta pot.

    Just dump the bacon mixture into the pasta, just on top.

    Mix it together

    Add your grated cheese, too little is better than to much. Folks can add more to their own.

    Serve, you could garnish with parsley if you choose to.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
