Couscous with Chicken and Vegetables 🤩

Start by preparing the chicken with the vegetables: In a pressure cooker, heat a little olive oil and add the chopped onion. Sauté until softened. Add the chopped tomatoes, spices, bouillon cube, and tomato sauce. Then add the chicken pieces and cook for a bit until the chicken releases its juices.

Add the chopped vegetables and stir to combine. Pour in water to cover, close the pressure cooker, and once it starts to whistle, cook for 10 minutes. Turn off the heat; the chicken and vegetables should be cooked through.

For the couscous: In a pot, heat a little olive oil and add the couscous. Dissolve the bouillon cube in a little water in a cup, then pour it over the couscous with a pinch of salt. Add just enough boiling water to cover the couscous (do not add extra). Stir briefly to mix in the salt and bouillon. Let it sit for 5 minutes.

Serve the couscous topped with the chicken and vegetables, and spoon a little broth over the top. Enjoy!
