Ingredients

  • 1small chicken cut up into pieces or prepackaged. 4lb
  • 1 cancream of chicken soup
  • Bread for stuffing (your choice) or stove top
  • 4 stalksCelery. About
  • Onion 2 medium
  • 2Carrots about
  • Salt and pepper to taste. Or pepper corns
  • Celery seed about a tblsp
  • 1bay leaf
  • Halflemon rind. About 2-3 strips

Steps

    Fill large pot with cold water. Enough water to cover all the chicken. Add celery, carrots, onion in chunk cuts. Add salt and pepper (or pepper corns). And one bay leaf. Lemon strips.

    Cook on medium low. (I use level 4-5 on elect stove) when water is just shy of boiling turn down to low. (mine would be 2-3) and cook till no redness appears when stuck. Save the liquid, toss the rest. The whole process for me took approx. 2 1/2 - 3 hrs. Remove and cool.

    This step is up to you. You can make stove top for your topping or homemade stuffing. My homemade consists of dicing the remaining celery, onion, and celery seed into a small pan with butter and cooking on medium till slightly tender. (15-20 minutes) or follow the stove top direction. This can be done while waiting on the chicken.

    Ok your chicken is cool so strip it bare. (If you like, dice the skin for your stuffing or throw under the broiler for crisps, yum) shred the chicken into a small roasting pan (9x11).. Pre-sprayed with one of those grease sprays. (Pam) shhh I buy store brand. Lol

    So your chicken is now shredded into the bottom of the pan. Take your can of soup and some cooking water and mix the 2 together. Thin It just to taste. Pour over chicken. Add salt and pepper to taste. Top with your stuffing mix and a little more salt and pepper. Bake 1-1/2 hrs at °350. If stuffing gets to dark cover loosely with foil.

    The wife likes stove top so that is on top.(One box) I like homemade which I didn't get a pic of.

I tend to cook by instinct. I know what I like and imagine and then just do it. 99.95% of the time it works out. 😁 luckily I have a 13 yo that likes some things but not others.(tomatoes) And a finicky wife who lies when she doesn't like something just to make me feel better. (But will eat the **** out of something she does like)I am my own worst critic and I'll tell you. (not enough salt or pepper or something is missing.)
