Vegetarian Chicken Tacos

When I was a kid, my stepmom used to make these tasty chicken tacos that my family was completely obsessed with, couldn't get enough of, can't eat just one kind of taco. Now, several years later and that stepmom long gone, I decided to try and make a version of those same old tacos that my vegetarian/pescatarian husband could try. I'm happy to say he loves them!

Ingredients

  1. 2 packagesQuorn Chik'n Tenders (or any other meatless chicken)
  2. 18Corn Tortillas
  3. 8 oz.shredded Mexican Cheese
  4. 1 bagShredded Lettuce
  5. 1-2diced Tomatoes
  6. 1larges diced Avocado
  7. 6 teaspoonsOlive Oil
  8. Vegetable Oil (for tortilla shells)
  9. 1/2 teaspoonSalt
  10. 1 teaspoonPepper
  11. 1/4-1/2 teaspoonGround Cumin
  12. 1/4-1/2 teaspoonGarlic Powder
  13. 1/4-1/2 teaspoonOnion Powder
  14. 1/2 teaspoonCayenne Pepper
  15. 2 tablespoonsLime Juice
  16. 2 tablespoonsLemon Juice

    Preheat oven to 375°F.

    Preheat large skillet on medium heat with Olive Oil.
    Add both packs of Quorn Chik'n Tenders.
    Add salt, pepper, cumin, garlic powder, onion powder, & cayenne pepper.
    Cook for 12-15 mins, stirring frequently.
    Add lemon and lime juices halfway to 3/4 way into cooking.

    While the "chicken" is cooking, heat vegetable oil in a smaller skillet at medium-high heat for tortilla shells. Fry shells for desired crispines (I cooked for about 30-60 seconds on each side.)

    After "chicken" and shells are done, stuff shell with Cheese, then add "chicken", then add more Cheese on top (for extra cheesiness, of course). Then place filled taco shells on a baking pan, bake for about 5 mins until golden brown and cheese is melted, or until desired crispiness.

    Add all the veggies you'd like and enjoy!
