Ingredients

2 servings
  1. 2cooked chicken legs
  2. 1-2 tablespoonsmayonnaise
  3. 1 teaspooncurry powder
  4. pinchgaram marsala
  5. 1 teaspoonmango chutney
  6. 1 tablespoonsultanas
  7. dashlime juice

Steps

  1. 1

    Cut chicken into 1 cm dice

  2. 2

    Mix mayonnaise, curry powder and garam marsala in a bowl, add lime juice.

  3. 3

    Stir in sultanas, mango chutney and diced chicken.

  4. 4

    Cover and place in fridge for at least 1 hour.

  5. 5

    Serve, makes good starter, filling for jacket potatoes or sandwiches or as a salad.

  6. 6

    For extra flavour, dry fry the spices, allow to cool before adding to mayonnaise.

  7. 7

    You can substitute dried apricots (diced), raisins or halved grapes in place of sultanas.

When I left school I trained as a chef,worked in 5*London hotel for a few years.Drifted into transport planning,retired, do most of the cooking at home.Now have more time to play (experiment) in the kitchen, like to add my own twist to recipes ( my wife calls it 'tampering'!) bake bread and make / decorate novelty cakes for family and close friends.Two daughters and three grandchildren. Celebrated Ruby wedding anniversary with wife Pam 2014.
