Ingredients

  • 2 cupBasmati rice
  • 1 cupghee
  • 2-3cloves
  • 1black cardamom
  • 1bay leaf
  • to tasteSalt and red chilli powder
  • 2potatoes cut into wedges
  • 1 cupfinely chopped veggies (carrot. Cabbage, capsicum)
  • 4onions sliced
  • 6-7garlic cloves
  • 1green chilli
  • 4 cupswater
  • 10-12soya chunks soaked in water
  • 10-12 piecesfried cottage cheese
  • 1/2 kg curd for Raita
  • 1 cupcurd
  • 1 big leaf of cabbage for smoking process
  • Fresh coriander leaves for garnish
  • 2-3 piecescharcoal
  • 1papad

Steps

    Wash rice 2-3 times and soak them in water for 1/2 anhour

  2. 2

    Take a heavy bottom pan heat ghee in it. Add all the dry condiments like jeera. Tejpatta, daalchini, clove, green and black cardamom. Add sliced onions and sauté them for few minutes. Add chopped veggies and stir fry them. When veggies become little soft add salt and pepper powder. Add curd and stir continuously to mix it well with veggies. When ghee comes out then add soya chunks and Paneer, potatoes to it. Mix well and cook for 2-: minutes.

    Now pour 4 glasses of water and boil it. After water boiled add rice into it and cook it on high flame after 5 minutes when water reduced cover the pan with a lid and slow down the flame. Check out after 2/3 minutes whether rice is cooked or not. Rice is cooked completely then put cabbage leaf on it. Heat ghee. Burn charcoal and put it on cabbage leaf. Put dry condiments on the charcoal and pour heated ghee on it and again cover the pan and let smoke flavor dissolve in the pulao completely.

    Roast a papad and put it on a bowl and press it with a cloth to get the shape of bowl. Serve pulao in it hot with mix veg Raita

  5. 5

    For Raita sift the curd in a sieve and add finely chopped onion and tomato and cucumber. Mix salt and black pepper powder. Bhuna jeera powder and coriander leaves add at the time of serving.
