Stir slightly to submerge the chicken, then cook the rice as usual. Wait for the rice cooker to signal when the rice is done.

Let's make the dipping sauce while waiting for the rice. Lightly pound the fermented soybeans in a mortar, add sugar, lime juice, and dark soy sauce (adjust to taste). Add finely chopped ginger, fresh chili, and garlic. You may sprinkle a little cilantro if you like.
