Ingredients

25 minutes
  1. 3-4 cupsuncooked rice
  2. 2chicken thighs
  3. 2chicken breasts
  4. (as preferred) garlic + cilantro roots + ginger
  5. 2 tablespoonsoil
  6. 1/4 teaspoonsalt
  7. Dipping Sauce Ingredients
  8. 1/2 cupfermented soybeans
  9. 2-3 tablespoonssugar (to taste)
  10. 2 tablespoonslime juice or vinegar
  11. 1-2 teaspoonsdark soy sauce
  12. to taste, finely chopped ginger + fresh chili + garlic

Steps

    Heat oil in a pan and fry the garlic, ginger, and cilantro roots until golden and fragrant, then set aside.

    Clean the chicken and set aside. Wash the rice and add water in the rice cooker as you would normally cook rice. Add salt, the cleaned chicken, and the fried ginger, garlic, and cilantro roots. Stir slightly to submerge the chicken, then cook the rice as usual. Wait for the rice cooker to signal when the rice is done.

    Let's make the dipping sauce while waiting for the rice. Lightly pound the fermented soybeans in a mortar, add sugar, lime juice, and dark soy sauce (adjust to taste). Add finely chopped ginger, fresh chili, and garlic. You may sprinkle a little cilantro if you like.

    After 15 minutes, it smells great. 10 more minutes and the rice cooker signals it's done. 😀😀😀 Doesn't it look appetizing? 😀😀😀 Get ready to enjoy this simple deliciousness in your own kitchen.
