Make use of leftover bananas from offerings to cook this delicious dessert.

Peel the bananas, remove any stringy fibers, and cut them into small pieces.
Dissolve 2 tablespoons tapioca starch and 1 teaspoon cornstarch in a small bowl of cold water.
Rinse the tapioca pearls, then soak them in cold water for about 15 minutes until they expand. Drain well. Alternatively, after soaking, you can boil them until translucent, then transfer to cold water and drain.
Marinate the banana pieces with a little sugar and a pinch of salt. Let sit for about 30 minutes to absorb the flavors.

🔪🍶How to cook the dessert🍌
Pour 1/2 can coconut milk (about 1 2/3 cups or 400 ml) and 1 cup cold water into a pot. Heat the coconut milk over low heat, then gently add the bananas. Cook until the bananas are soft.

🍌When the bananas are soft, add the tapioca pearls and gently stir to avoid breaking the bananas. Cook until the tapioca pearls turn translucent (if you already cooked the tapioca pearls, just add them to the pot now), then add more coconut milk as desired.

🌯Slowly pour in the tapioca starch mixture while stirring gently so the cornstarch dissolves evenly and the dessert thickens.

🍨🍧I used leftover bananas from offerings to make this dessert, so I just used what I had at home. When you buy this dessert, it’s often topped with crushed roasted peanuts, shredded coconut, or dried coconut. Feel free to add these toppings if you like.
