Minced Meat & Coconut Rice

Boil 3 cups of water. When the water comes a boil, pour in the 2 cups of rice, and 1 cup coconut milk.

Cover and let it cook. When it starts to boil lower the heat and let simmer until all the water has evaporated.

Put mince meat in pan and let brown. Fry with onions, add tomatoes and grated carrots. Season with salt and some black pepper. Add dhania (cilantro) at the end when everything has cooked and you're about to remove from the heat.

For the salad, roughly cut lettuce leaves, add julienned tomatoes and onions. Sprinkle with a dash of salt and add juice of one lemon. Toss.

Serve.
