Khaman dhokla

Take one cup of besan and add one and quarter cup of water and mix without lumps. Add salt, pinch of turmeric, lemon juice and chilli ginger paste

Meanwhile grease a nine inch shallow vessel and keep for steaming

Now add one sachet of eno to the besan mix and pour into the hot greased steaming vessel. Close and cook for 15 minutes. If you are using cooker don't use the weight

Poke with a knife and if it comes clean, then it is cooked

Cut into pieces

Make tadka with mustard, jeera, chopped green chillies, hing, little turmeric, curry leaves and add about half glass of water

Pour over the dhoklas in the basin and garnish with coriander, carrot and fresh coconut
- 8
Serve hot or cold with spicy coconut chutney. For coconut chutney grind fresh coconut, few garlic pods, red chilli powder, little tamarind salt and water
