I previously shared this recipe with a custard filling, but this time I tried it with cheese and it turned out delicious.

Place the kunafa pastry in a large bowl and rub it well with plenty of clarified butter, breaking it into small pieces.

Divide the mixture evenly between two same-sized baking pans greased with butter.

Bake in the oven until golden brown on both the top and bottom. Watch carefully to avoid burning.

Set both layers aside on a rack to drain any excess butter.

To make the filling, mix the milk with the fine semolina in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.

Once it comes to a boil, add the mozzarella cheese and stir quickly until the cheese is fully incorporated. Immediately start assembling the kunafa.

Place the first layer of kunafa in a serving dish, spread the cheese filling evenly on top, then place the second layer over the filling.

Pour the simple syrup over the top and decorate as desired.

Serve hot to enjoy the melted cheese.
