Ingredients

Serves 6 servings
  • 1/2 poundOthmaliyeh kunafa pastry (about 225 grams)
  • 1 cupclarified butter or as needed (about 225 grams)
  • For the filling:
  • 2 cupsmilk (about 480 ml)
  • 4 tablespoonsfine semolina (about 40 grams)
  • 1 1/2 cupsshredded mozzarella cheese (about 170 grams)
  • For serving: simple syrup

Steps

  1. 1

    Place the kunafa pastry in a large bowl and rub it well with plenty of clarified butter, breaking it into small pieces.

  2. 2

    Divide the mixture evenly between two same-sized baking pans greased with butter.

  3. 3

    Bake in the oven until golden brown on both the top and bottom. Watch carefully to avoid burning.

  4. 4

    Set both layers aside on a rack to drain any excess butter.

  5. 5

    To make the filling, mix the milk with the fine semolina in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.

  6. 6

    Once it comes to a boil, add the mozzarella cheese and stir quickly until the cheese is fully incorporated. Immediately start assembling the kunafa.

  7. 7

    Place the first layer of kunafa in a serving dish, spread the cheese filling evenly on top, then place the second layer over the filling.

  8. 8

    Pour the simple syrup over the top and decorate as desired.

  9. 9

    Serve hot to enjoy the melted cheese.
