Ingredients

  • 2 lbsEscarole ( or two bunches) washed thoroughly.
  • 1 cupDiced Pancetta ( optional)
  • 2 cupsCannelloni beans
  • 4 clovesgarlic ( sliced thin and browned in olive oil)
  • 4 cupschicken broth ( canned broth is fine )
  • Olive oil
  • to tasteSalt
  • to tastePepper
  • Grated cheese ( when dish is plated sprinkle cheese on top)

Steps

  1. 1

    In a skillet with olive oil, brown sliced garlic and diced Pancetta ( optional)

  2. 2

    Wash throughly the Escarole, and add to skillet. Sauté until the Escarole becomes soft and decreases significantly.

  3. 3

    Add Chicken Broth and Cannelloni beans.

  4. 4

    Cook for 15 minutes on medium heat.

  5. 5

    After plating the dish, sprinkle with grated cheese and eat with Italian bread.
