Wash and cut the potatoes, tomatoes, onion and brinjal in pieces...

Heat oil in a kadahi, crackle cumin seeds..add asafoetida and onion.When onion turns red add turmeric, red chilli powder and tomato.Now add brinjal and potato.Mix well for 1 minutes on low flame.

Add salt according to taste.Now cover the kadahi for 10 minutes.

Add garam masala and coriander leaves switch off the flame.

Tasty aaloo baingan is ready to serve.
