Salmon is an excellent source of omega-3, a fatty acid that promotes cardiac health as well as eye, skin and brain health. Smoked salmon keeps well in the freezer.

Preheat oven to 350 degrees F. Butter a single-serving oven-proof custard dish. Add the sour cream and spread it to make an even layer. Add the chopped fresh dill. Break the egg into the dish, centering the yolk.

Place the custard dish in the centre of a pie plate. Carefully pour warm water into the pie plate until it reaches half an inch up the side of the custard dish.

Place in the oven and bake for 15-20 minutes or until the yolk is set to your preference.

Remove from the oven; place the custard dish on a rack and let sit for 1 minute. Place the smoked salmon on a breakfast plate. Run a knife around the edge of the baked egg and holding the custard dish with a pot holder (it will be hot), tip the egg out onto the smoked salmon. Season to taste with salt and pepper.
