This dish can be served for breakfast, brunch or a dinner side dish. The better the tomato, the better the results.
Steps

Preheat broiler. Wash the tomatoes, and halve each, cutting through the stem end. Set on paper towels, but side down, for about 20 minutes.

Place the tomatoes, cut side up, in a shallow casserole dish. Brush the tops with olive oil. Season with salt, pepper and garlic. Sprinkle with cheese, and dot with butter. Sprinkle with chopped parsley.

Place the baking dish under the broiler until the cheese is bubbly and browned, approximately 3 minutes. Watch closely so as not to burn! Serve immediately. (132 calories/serving; GL=1, Glycals=1)
