Steps

Cut the leftover PAROTTAS to small pieces

In a hot pan, add oil, mustard seeds, chillies, onion and saute well till onion turns golden brown

Add ginger garlic paste and saute till raw smell goes off

Add tomatoes and saute till it turns mushy
- 5
Add the spice powder and garam masala

Add eggs to it and mix well

Do not allow the eggs to scramble

Add the cut pieces of parotta to it

Mix well till egg mixture coats parottas well
- 10
Garnish with coriander leaves and serve hot
