Ingredients

  1. 3 poundscow foot
  2. 6 cupwater
  3. 2 clovegarlic, chopped
  4. 6whole cloves
  5. 6whole pimento (allspice) berries
  6. 1 tablespoonsalt
  7. 1 tablespoonblack pepper
  8. 2medium onions, chopped
  9. 2 stalkescallion, chopped
  10. 1/4 teaspoonWorcester Shires sauce
  11. 3 tablespoonolive oil
  12. 2 tablespoonsoy sauce
  13. 1 teaspoononion powder
  14. 1 tablespoonblack pepper
  15. 1/4 teaspoonketchup
  16. 1 teaspoonjerk sauce
  17. 3 sprigsfresh thyme, chopped
  18. 1 tablespoongrace caribbean traditions all purpose seasoning
  19. 5 cupsbeef stock for every 2 pounds
  20. 2 cansgrace broad beans
  21. 1teaspoon(s) cornstarch, dissolved in 2 tablespoon of water

Steps

  1. 1

    Wash cow foot in a mixture of 4 cups water and white vinegar.

  2. 2

    Scald cow foot in 4 cups of boiling water for 5 minutes then drain.

  3. 3

    Season with garlic, onion, pimento, thyme, escallion and salt. Rub in the seasoning well. Add soy sauce, grace caribbean traditions all purpose seasoning and black pepper.

    Marinate for 1 hour

  5. 5

    Heat pressure cooker and pour in vegitable oil, add marinated cow foot and brown lightly stirring constantly.

  6. 6

    Add beef stock and fasten pressure cooker lid, pressure cook for 20 minutes, cool pressure cooker thoroughly before opening.

  7. 7

    Add carrots, green peppers and scotch bonnet pepper, stir lightly and allow vegetables to cook until tender. Add grace broad beans and cornstarch and allow to simmer for another 5 minutes.
