Ingredients

4 servings
  • 1 ccooked black beans (if canned, rinsed), mashed and warm
  • 1large garlic clove, smashed with 1/4 tsp salt
  • 8Romaine lettuce leaves, large
  • 1 lbgrilled sirloin steak, thinly sliced
  • 1 cshredded cheese (cheddar or Monterey Jack)
  • 1 cguacamole
  • 1 ctomato salsa, or as needed

Steps

    In a small skillet over low heat, mix the garlic and salt into the black beans.

  2. 2

    Select 8 of the best large outer leaves from a head of Romaine lettuce. Clean and set on a work surface.

  3. 3

    Place a few slices of steak on each leaf of Romaine. Top the steak with a portion of beans, cheese, guacamole and salsa. Roll as if making a burrito with a flour tortilla. Serve 2 per person with extra salsa on the side.
