Chop up the dark chocolate.

Gently heat a small amount of milk, about 150ml (about 3/4 cup) and melt the chocolate into it.

Wait until it is properly melted in.

Pour in another 300ml or so of milk, and about 75ml cream. Stir well, heat on medium until it is all good and hot, but not boiling. Just on the verge.

Just a pinch of sea salt and cinnamon. You want to bring out the chocolate flavour, not overpower it. Now is also a good time to warm your mugs in the oven.

Use your frother now (if you have one), while the hot chocolate is still on the stove.
