Oxtail Freekeh Casserole (Tagine)

Oxtail is usually sold whole by the tail, not by weight.

Sort and clean the freekeh well. If it's local, soak it for 30 minutes. If it's fine-grain, just rinse it thoroughly.

Sauté the large diced onion in ghee. Add the washed and drained freekeh and stir constantly to coat it in the ghee. Add the grated small onion, garlic, ginger, salt, black pepper, cinnamon, cardamom, and 1/2 teaspoon turmeric. Stir and enjoy the aroma.

Add 2 cups of the oxtail broth and stir. Cover and cook until the freekeh is about three-quarters done. Grease a baking dish, spoon in the freekeh, and nestle the oxtail pieces into the freekeh so they're arranged throughout.

Top with tomato slices, pour over 1 cup of broth (or tomato juice if you like), and sprinkle with black pepper.

Cover the casserole and bake in a preheated medium oven for 15 minutes. Uncover and bake for another 5 minutes to brown the top. Serve and enjoy!
