Heat 2 tbsp. oil is a pan on low heat.

Add the cubes paneer in the oil & shallow fry them till get golden brown. Make sure to flip them after 2-3 minutes to get even colour. Be careful not to break the paneer cubes while frying them.

Once the paneer cubes have been fried, soak them in a bowl of warm water. Let them stay till we prepare our gravy. Soaking the paneer cubes helps them to stay soft

In the same pan where we fried paneer, add additional 2 tbsp. of oil & heat it on low flame.

Once the oil is hot enough, add 1 tsp. cumin seeds and 1 inch of cinnamon stick.

Fry them for about 30 seconds or till the time till start crackling.

Next, add 2 medium sized finely chopped onions & fry them till they become translucent. Add a pinch of salt too along with onions for quicker cooking.

It takes around 5-7 minutes on low flame.

After the onions are cooked, add 1 1/2 tbsp. ginger garlic paste.

Fry till the raw aroma of ginger garlic goes off.

Next add paste of 4 medium sized tomatoes.

Also add 1 tsp. turmeric powder, 2 tsp. red chilli powder, 2 tsp. coriander powder, 1 tsp. cumin powder & 2 tsp. garam masala to the mixture.

Cook the above mixture till the oil starts to separate.

Stir the mixture in between, so that it does not stick to the bottom of the pan.

Add 1/2 cup water to the mixture. Also add 1/4 milk to the masala mixture.

Let the mixture come to boil, and cook it for 2-3 minutes more.

At the end, add the fried paneer cubes to the mixture & cook for 2-3 minutes.

Make sure to taste for salt & any spices and adjust accordingly.

Garnish paneer masala with finely chopped coriander leaves.

Serve paneer masala with hot rotis, phulkas or steam rice.

Notes - Do not cook the paneer cubes in gravy for longer time, as paneer gets hard after prolonged cooking.

Notes - I prefer to use homemade paneer, but you can use store bought paneer too.

Notes - Adjust the spices as per your taste.

Notes - Some people do not like to add milk or cream in the gravy. It is totally optional. Milk/cream provides rich flavor to gravies. If you are skipping milk, make sure to lower the red chilli powder & garam masala quantity, as it may get spicier without milk.
