This is my own version of grilled vegetables. I got the idea while making a barbecue for my guests, but I prepared it a little differently. I hope you enjoy it. Thank you!

Cut all the vegetables into medium-sized cubes. In a skillet or nonstick pot, heat 3 tablespoons of oil. Once hot, add the vegetables and stir well. Add the spices, mix, and cook over medium-low heat.

Cover the pot to help the vegetables release their moisture and cook thoroughly without adding water. Stir occasionally. Check the vegetables just before they are fully cooked.

Cook for 15 to 20 minutes. About 5 minutes before turning off the heat, remove the lid and increase the heat slightly to help evaporate any remaining liquid. Sauté briefly, then transfer to a serving dish.

While still hot, sprinkle a generous amount of shredded mozzarella cheese on top. Place in a closed space like a microwave (turned off) to let the cheese melt from the steam of the hot vegetables.
