Steps

Peel brinjals, cut in to large dices and keep in water to avoid browning.

Saute brinjals in little oil with adding salt and garam masala till it softens and is par cooked

In a bowl, add cream, bit of cheese and crushed black pepper
- 4
Add the cream mixture to brinjals, mix well
- 5
Transfer to glass bowl, add rest of the grated cheese and microwave till brinjal is cooked
- 6
For oven, transfer to tray, add cheese and bake at 150° for 10 min or grill till brown
- 7
Garnish with coriander and serve hot.
