I love challenges and this is one cake i have never dared to bake... When i made the candied orange peels, i knew i had to use them in a fruit cake. While browsing through fruit cake recipes, i came across one that i really liked and decided to try it out. I wish i had taken pictures for each stage. I will do so soon and update this recipe.

Ingredients

2hrs to 2½hrs
  • Mollases sugar 150g (i dont like my cakes too sugary)
  • 600 gAll purpose flour
  • 120 gMargarine
  • If using butter add a pinch of salt
  • 5Eggs
  • 10 gBaking powder
  • 2 gBaking soda
  • Cinnamon 1tps
  • Ginger ½tps
  • Nutmeg ½tps
  • Cloves½tps
  • Orange zest ½tps
  • Lemon zest ½tps
  • 200 gBakers mix
  • 1Teabag
  • 2 CupsWater
  • Red cherries100g(diced)
  • 50 gCandied orange peels(cut into small pieces)
  • 2 Tbspblack treacle

Steps

2hrs to 2½hrs
  1. 1

    In a pan, add the 2 cups of water and bring to boil sugar, margarine, cinnamon, ginger, cloves, nutmeg, teabag and bakers mix. Let it simmer for 5mins

    Preheat your oven to 160 degrees

  3. 3

    Line your baking tin

  4. 4

    Sift the flour together with the baking powder and baking soda.

  5. 5

    Add the lemon zest, orange zest, candied peels, red cherries to the flour, drain boiled fruits and add them to the flour also, mix all of them. This prevents the fruits from sinking to the bottom when baking.

    In a separate bowl, beat the eggs, add half of the spiced water. Using a wooden spoon fold in half the flour. Add the rest of the spiced water and the remaining flour and completely fold the flour.

    Pour it in your prepared tin

  8. 8

    Bake for one hour under 160 degrees then reduce to 150 degrees until it cooks through.

    Remember to remove the tea bag, don't bake with it😂😂😂

  10. 10

    Let it cool. Then wrap it with a cling film to keep it moist.

    Enjoy with a glass of milk

Add the teabag when you are boiling the fruits, i love it for the colour it leaves and alittle flavour to the boiled fruit mix.
