Heat the oil in a non-stick pan over high heat, but not the highest setting, and add the two eggs.

Use a spatula to break them up with circular motions.

Before they are fully cooked, after about a minute, add the rice, salt, and pepper, and stir continuously until it is lightly browned. Done!

The rice must be from the previous day to have lost its moisture. Otherwise, when it comes into contact with the oil, it might sizzle and splatter.

Before adding the rice, you can sauté some onions, bell peppers, cooked peas, corn, or anything else you like or have leftover...
