Gajar koshimbir (carrot salad)
Maharashtrian style quick, tasty salad recipe.
Steps

Place grated carrots (gajar) in a mixing bowl.

Add lemon juice, salt, sugar, roasted peanut powder. Mix well.

Heat oil in tadka pan on medium low flame. Add mustard seeds, asafoetida, chopped green chilli.

Switch off the gas. Add this tadka over carrot and mix well. Garnish with coriander leaves.
