In a big bowl mix maida, salt, baking soda, 1tbsp oil and sugar. add water to make a soft dough. let it rest for 10 mins

Meanwhile finely chop all the veggies onion, capsicum and tomato. mini chopper is a great help in the kitchen

Take grated cheese and veggies in a bowl. sprinkle some salt, pepper and chilli flakes. mix well.

Roll out a big roti on the working table with a rolling pin. add the filling in the centre and spread as shown in pic. apply water at the end of the roti. close to make an envelope.

Heat oil in a pan to deep fry the envelopes. fry the envelopes on low flame so that it cooks evenly from inside as well.

Turn and fry both sides till golden brown. serve hot with ketchup or chutney.
