Preheat your oven to 375°F / 190°C.

Spray a muffin tin with cooking spray.

In a small bowl combine hot sauce, sour cream and cream cheese to make the sauce.

In a medium bowl mix together the chicken, 2/3 cup of mozzarella, green onions, blue cheese and sauce.

Pull apart the biscuits and flatten them to four inch rounds.

Push a biscuit into each muffin cup, press firmly to cover all edges, allow some to overflow.

Distribute the chicken mixture into each of the biscuit cups.

Bake for about 12 minutes or until biscuit edges are golden brown.

Top with extra mozzarella or blue cheese.
