Ingredients

  • 350 gfeta cheese
  • 2garlic cloves
  • 1/2 teaspoonmixed peppercorns
  • 8coriander seeds
  • 1bay leaf
  • 1-2 tbspdrained capers
  • Fresh oregano or times with
  • Olive oil to cover
  • Hot toast to serve
  • Note: if you wish you can add black or green olives to the feta cheese in the marinade

Steps

  1. 1

    Cut the feta cheese into cubes. Thinly slice the garlic. Mix the peppercorns and coriander seeds in a mortar and crush lightly with a pestle.

  2. 2

    The Fatah cubes into a large preserving jar with the bay leaf interspersing layers of cheese with the garlic, crushed peppercorns and coriander., Papers and the fresh oregano or thyme sprigs

  3. 3

    Pour in enough olive oil to cover the cheese. Close tightly and leave to marinate for 2 weeks in the fridge.

  4. 4

    Left out the photo cubes and serve them on hot toast sprinkle with a little of the oil from the jar
