#starters Chicken Pottitherichathu aka “exploded chicken” is an easy and super delicious Malabar Iftar speciality served in the popular Adaminte Chayakada-a famous Malabari restaurant in Calicut, Kerala!
Steps
- 1
Clean and drain the chicken strips. Flatten the chicken breast strips. Marinate the chicken with ginger-garlic paste, garam masala powder, red chilli powder, turmeric powder, pepper powder, lemon juice, and salt. Leave it aside in the refrigerator for at least 1 hour.
- 2
Soak the bamboo skewers in water for 10-15 mins. Cut the samosa sheet into thin strips and keep it aside.
- 3
After an hour, take the marinated chicken from the refrigerator and add the beaten egg and mix well. Add the maida and mix until the chicken pieces are well coated with the maida. Thread the marinated chicken onto the skewers.
- 4
Heat oil in a large pan. Roll the chicken skewers in the samosa sheet slices. Carefully fry the chicken skewers in batches in medium flame until the chicken is cooked and the covering becomes golden brown and crispy. Drain them onto a paper towel. Repeat the process with the remaining skewers. Switch off the flame. Tasty chicken pottitherichathu is ready to be served hot.
