Ingredients

4 hrs
3-4 servings
  1. 4-5 poundsbone in beef short ribs (~6 ribs)
  2. 20 slicespepperoni
  3. 1 tablespoonolive oil. Chili infused
  4. 1onion, chopped
  5. 3carrots, sliced
  6. 2ribs of celery, sliced
  7. 4garlic cloves, minced
  8. 4 ouncestiny button mushrooms
  9. as neededsalt and pepper to taste
  10. 1 1/2 cupsdry red wine
  11. 28 ouncecan crushed tomatoes
  12. 4 cupslow sodium beef broth
  13. 2 tablespoonsheavy cream
  14. 1 teaspoonitalian seasoning spice blend
  15. 1 teaspoonfresh lemon juice
  16. 1 teaspoonhot sauce, such as Franks Red Hot
  17. 1/4 teaspoonred pepper flakes
  18. 1 cupfrozen pearl onions
  19. 2 tablespoonsfresh chopped basil
  20. 2 tablespoonsfresh chopped parsley
  21. 2 tablespoonsfresh grated romano cheese plus more for serving

Steps

  1. 1

    In a large skillet cook pepperoni until crisp, remove to paper towels to drain. Save for later.

    Season short ribs with salt and pepper. Add olive oil to skillet and brown short ribs in one layer on medium high heat removing each rib to a dutch oven when its brown. Add more oil if needed.

    Add onion, carrot, celery, mushrooms, and garlic to skillet, cover and soften on medium low heat for 5 minutes.

    Uncover, add wine and bring to a boil and reduce to almost gone.

    Add broth, tomatoes with juices, onions, italian seasoning, cream, lemon juice, hot sauce and red pepper flakes. Crunch up or pulverize the pepperoni slices and add to pan. Add about 1/2 teaspoon pepper and salt to taste. Bring to a simmer.

    Transfer liquid carefully to short ribs in dutch oven, mix well

    Cover and place in preheated oven at 250°F for 3 1/2 to 4 hours. Check meat, it should be falling off the bone tender.

    Remove short ribs carefully from pot to a plate, discarding any bones that fell off. At this point I transfer liquid to a bowl and refrigerate ribs and sauce, covered to allow excess fat in sauce to harden to remove easiy when cold. Usually overnight.

    Reheat sauce in fresh clean pan, add basil, parsley and cheese and check for seasoning. If the sauce is too thick add in some beef broth.

    Return ribs to sauce.to heat through gently, serve with mashed potatoes or pasta and additional Romano cheese.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
