Ingredients

  1. 1 cuprava / Semolina / sooji
  2. 3/4 cupcurd / Yogurt sour
  3. 1 tspCumin seeds
  4. 1green chilli finely chopped
  5. 5Curry Leaves finely chopped
  6. 1 inchGinger finely chopped
  7. 2 tbspCoriander leaves finely chopped
  8. 3 tbspOnion finely chopped
  9. to tasteSalt
  10. Water if required to prepare dough
  11. Oil for deep frying

Steps

  1. 1

    Firstly, in a large mixing bowl take 1 cup of rava. further add curd. amount of curd depends on the curd thickness, so add as required. use sour curd for tasty rava vada.

  2. 2

    Additionally add cumin seeds, green chilli, ginger, curry leaves, coriander leaves, onion and salt. mix well to form a dough.

  3. 3

    Add extra water or curd if required. if the dough turn watery add little more semolina / sooji.

  4. 4

    Rest the dough for 25 minutes, so that the sooji absorbs moisture and swells. now grease both hands with oil and take a ball sized dough.

  5. 5

    Flatten with hands and make a hole in centre. further, slowly drop into hot oil and fry the vadas on medium flame stirring occasionally. fry the vadas till they turn golden brown from both sides.

  6. 6

    And drain over kitchen towel to remove excess oil. finally, serve instant rava vada with chutney and masala chai.
