Aubergine with Mince Meat Chinese Style

Cook the rice in a cooker

Marinate the mince meat with soya sauce, sugar and oyster sauce.

Fry the finely cut aubergines in a fry pan with vegetable oil. Put a lid on to steam the aubergines.

Fry the chopped mushrooms in a pan with vegetable oil.

Fry the spring onions, ginger and chillies in vegetable oil.

Add the meat to the vegetable oil until half cooked.

Add the aubergines and mushrooms and finish cooking the meat.
- 8
Served on rice.
