In a grinding jar add soaked urad dal add hing add green chilli add ginger add salt add litter water

Blend it into thick smooth paste take it out in a bowl

Cover the bowl and leave it for 30 minutes

Turn on the flame and heat oil in a thick bottom pan on the other stove heat 2 glass of water in a pan add 1/3 tsp salt and 1/3tsp sugar in the water

Let the water heat for 3-4minuter on medium flame

Mix the batter once before making the vada once the water is heated turn off the flame

Drop small amount of batter in hot oil to check the temperature of oil take it out put one of batter at a time like this

Repeat the process to make all the vada fry it on low medium flame flip it to fry other side

Prick the vada with fork to cook it from inside like this keep flipping in between

Once the vada turns golden take it out on the kitchen towel fried vada are ready put the fried vada in lukewarm water cover it and leave it for 15-20 minutes gently squeeze all the soaked vada to extract the water from it

Put 3-4 vada in a serving bowl

Pour whisked or blended curd on it
