Soak the glass noodles in plenty of water for 10–15 minutes.

Rinse the bean sprouts and drain well (set some aside to serve on the side).

Mix the Pad Thai sauce and adjust the taste as you like. Set aside.

Stir-fry the dried shrimp and tofu in oil until fragrant, then add pork or fresh shrimp and stir-fry until just cooked.

Add the soaked glass noodles and Pad Thai sauce. Stir-fry until the noodles are soft.

Push the noodles to the side of the pan, crack the eggs in, scramble them, and let them cook until almost set. Cover with the noodles and continue stir-frying.

When everything is well combined, add the Chinese chives and bean sprouts. Stir-fry just until slightly wilted.

Transfer to a plate. Serve with crushed peanuts, chili flakes, and lime, along with fresh vegetables if you like.

Tip: I like to mix the chili flakes directly into the sauce before stir-frying—it blends in nicely.
