Ingredients

30 minutes
Serves 2 servings
  1. 1 packageglass noodles
  2. 3 1/2–5 oz bean sprouts (about 100–150 grams)
  3. 1 cupChinese chives, washed and cut into 1–2 inch pieces
  4. 1 tablespoondried shrimp, soaked in water for 5–10 minutes to soften
  5. Pork or fresh shrimp, as desired
  6. 1/2 blockfirm tofu (white or yellow), cut as you like
  7. Pad Thai sauce: 2 tablespoons fish sauce, 2 tablespoons palm sugar, 3 tablespoons tamarind paste, 1 teaspoon pork seasoning powder, 1/2 teaspoon seasoning powder (optional). Mix everything together or heat until dissolved, then add 1 tablespoon sesame oil

  9. Crushed peanuts, chili flakes, lime (amounts to taste)

    Soak the glass noodles in plenty of water for 10–15 minutes.

  2. 2

    Rinse the bean sprouts and drain well (set some aside to serve on the side).

  3. 3

    Mix the Pad Thai sauce and adjust the taste as you like. Set aside.

  4. 4

    Stir-fry the dried shrimp and tofu in oil until fragrant, then add pork or fresh shrimp and stir-fry until just cooked.

  5. 5

    Add the soaked glass noodles and Pad Thai sauce. Stir-fry until the noodles are soft.

  6. 6

    Push the noodles to the side of the pan, crack the eggs in, scramble them, and let them cook until almost set. Cover with the noodles and continue stir-frying.

  7. 7

    When everything is well combined, add the Chinese chives and bean sprouts. Stir-fry just until slightly wilted.

  8. 8

    Transfer to a plate. Serve with crushed peanuts, chili flakes, and lime, along with fresh vegetables if you like.

  9. 9

    Tip: I like to mix the chili flakes directly into the sauce before stir-frying—it blends in nicely.
