Take a kadhai add 4-5 tbsp mustard oil or as needed.

Add paneer cubes and fry.Dont not over fry as paneer might turn hard or burn.Once fried keep aside.Then fry cubed onion and capsicum and keep them aside as well.

For Paneer kadhai Masala:Dry roast bay leaves, cinnamon stick, coriander seeds,cumin seeds and pepper.Grind it well to make fine powder.Keep aside.

Now add sliced onion in the remaining oil and fry until translucent add whole ginger and garlic and saute finally add sliced tomatoes and saute well.Switch off the flame and grind the masala when slightly cooled.

Now add little oil in the pan add the puree and saute nicely.Then add Kashmiri red chilli powder, turmeric, normal red chilli powder and salt

Keep stirring until the masala leaves the oil

Now add garam masala,homemade kadhai Masala and fresh cream Give a nice mix

Finally add fried paneer, capsicum and onion and let it cook for 3-4 mins on medium flame.If needed u can add water to adjust the consistency

Finally crush the Kasuri meethi in between your palms and add them to the gravy.
