
Matumbo in curry sauce

Pre-preparation (wash matumbo thoroughly to avoid having a bad taste

Soak in boiling water in which bicarbonate of soda has been added,for 5 minutes then drain out.

Boil matumbo in fresh water for 1 hour. Drain out and reserve 1 cup of the water for stock.

Chop into cubes and keep aside

Heat oil,fry onions,garlic and ginger till almost browned.Add curry powder and stir briefly.

Add tomatoes and salt and cook till soft.

Add tomato paste and stir to incorporate. Cook briefly.

Add the reserved stock and bring to boil.

Once boiled,add matumbo and stir.

Cover and simmer(medium heat) for a further 10 minutes then add chopped dhania,rosermary and mint.

Serve hot with ugali or potatoes
