Ingredients

  • Veggies cleaned and chopped
  • 1large onion chopped
  • 2tomatoes chopped
  • 2 tbscoconut oil for frying
  • to tasteSalt

Steps

  1. 1

    Fry onions in oil(I wanted the taste of coconut without the creaminess its milk provides)

  2. 2

    Add tomatoes and cook until tender. Add veggies and sauté for a few minutes. I don't like them over cooked

  3. 3

    Serve warm with ugali
