Boil water until hot. Pour the omena into the hot water and let sit a few minutes then drain water. Repeat twice, this is to soften the omena and remove any sand or grit that may be in the sun dried omena. This stage is optional

Fry onions in oil until golden brown. Add salt and pepper. Add the omena and fry for several minutes

Add in the tomatoes and cook until tomatoes turn paste like

Add 1/2 cup water, cover and let simmer until the gravy has thickened to your desired consistency or how much soup you want the omena stew to have. Add chopped green or red chili

Serve with ugali and a side of vegetables
