Steps

First chop 1 medium size cauliflower in medium florets. And chop potato as well. Rinse the vegetable in water. Then chop onion and tomato.

In a kadhai or thick bottom pan, heat oil or ghee. After add the onion and tomato, stir it well.

Add the chopped ginger and spice up with turmeric powder, red chilli powder and salt. stir well

After 2-3 minutes, add the couliflower and patato. And stir again very well. Leave it for 20-25 minutes on a low flame. Cover the pan with it's lid.

In between for a couple of times, remove the lid and stir the aalo Gobhi well. Cover and then again continue to cook. Do not add any water.

Once the potato and cauliflower have cooked, sprinkle garam masala powder and mix it.

At last garnish aalo Gobhi Sbzi with a few coriander leaves.

And serve with rotis or pranthas.
