Ingredients

3 servings
  1. 2medium size apples of any variety
  2. 2 Tspbutter
  3. 1 tspapple spicy
  4. 1/2 cuporganic spelt flour
  5. 1/4 cuporganic oats flour, or any whole grain flour
  6. 1/4 cuporganic AP flour
  7. 3/4 cupapple cider or water
  8. 1/2 cupsourdough starter
  9. 1 tspbaking powder
  10. 1/2 tspbaking soda

Steps

    Dice apples into 1/2 inch cubes. Sauté them in 1 Tsp butter for about a minute. Add apple spicy and a pinch salt. Keep stir frying until the apple cook through but still firm to bite for about 2 minutes.

    In a mixing bowl add all flour and sourdough. Cover with a plate and set it on the countertop overnight to ferment.

    Next morning, stir in fried apples. Heat up a nonstick pan with a Tsp of butter. Add the baking powder and baking soda to the batter. Scope onto the hot pan and make 8 to 10 mini thick pancakes. Serve immediately.

Craving for delicious foods drives me to be creative in my kitchen all the time. Thanks to my intolerance of all refine foods such as white flour, white rice and sugar, transition to use whole grains through sourdough fermentation, soaking and sprouting seeds has opened a whole new world to me! All my recipes share the same principle of low fat/oil, almost no added sugar/honey, whole grains and as much fermentation Incorporated as possible to unlock its nutritional value and plus lots of made ahead secret ingredients that I've learned over the years. In my pantry, you'll always found stocks of ancient grains (spelt, kamut, millet), brown rice in various varieties, jars of dry beans in multiple color and shapes. Kimchi made with all kinds of seasonal veggies in my fridge and homemade stocks in my freezer all the time. Join me on this journey eat whole 2 thrive!
