Ingredients

  • 2medium potatoes, peeled and cubed
  • 8eggs
  • 2 Tbspajvar
  • 1/4 cupmilk
  • 3Calabrese sausages (or chorizo)
  • 1large chilli, chopped finely
  • 1 cupmushrooms
  • 1 bunchasparagus
  • 1zucchini
  • 2 Tbspcorn
  • 1/4 cupolives
  • 1 cupspinach
  • 1 cupgrated cheese
  • Salt and pepper to season

Steps

  1. 1

    Boil potatoes in a small saucepan until soft.

  2. 2

    Whisk eggs, ajvar and milk until combined.

  3. 3

    Fry the sausage, chilli, mushrooms, asparagus, zucchini and corn until almost cooked.

    Mix in eggs, olives, spinach, cheese and season with salt and pepper.

  5. 5

    Place pan into oven and bake on 180c for 20 minutes or until cooked through.
