Ingredients

2 people
  1. Leftover roast chicken or a few breasts
  2. Around 75-100g chorizo
  3. 2peppers
  4. 1onion
  5. Cajun seasoning (or 1 tsp each of garlic powder, paprika, italian herbs and chilli flakes)
  6. 120 glong grain rice
  7. 300 mlchicken stock
  8. Tintomatoes

Steps

  1. 1

    Chop the peppers, onion, chorizo and chicken

  2. 2

    Heat a tbsp oil in a large pan and fry all the above for 5 mins

  3. 3

    Stir through the seasoning. Add the rice, stock and tomatoes and cook for 20- 30 mins until the rice is al dente. Stir regularly, you might need to add more water. Taste and season with salt and pepper.
