On a stainless steel pan, simmer one and a half cup water till warm, add 3 cups flour and do an ugali like dough, but with wheat flour this time.

Let it slightly cool, grease your palms with ghee and knead till neat and well formed

Divide into big dough balls.

Roll the balls into round long strips

Cut into equal pieces as shown

Roll into rounds, then slightly press for a deep hole. Do this repeatedly till the end. Refer to pictures. When doing this, oil your palms and your finger for neater shapes.

When done, let them rest, also to firm them up. On a big pot add the light coconut milk, sugar, cardarmon and essence. When it boils, add the mathobosho while turning carefully so they don’t get mashed up. When heavy and thick, add the heavy coconut milk, turn for a few minutes then remove and let it cool. You can top with raisins, almonds and other nuts. Serve and enjoy!
