  2. 1large eggplant
  3. 1/2 teaspoonsalt
  4. ◆◆◆◆◆◆◆◆◆◆◆◆ Sauce ◆◆◆◆◆◆◆◆◆◆
  5. 1/4 cupchopped parsley
  6. 28 ouncestomato sauce
  7. 1/2 teaspoonbasil
  8. 1/2 teaspoonwhole leaf oregano
  9. 1/2 teaspoonsalt
  10. 1/3 cupsugar
  11. 1 teaspoongranulated garlic powder
  12. 1/2 teaspoonground black pepper
  13. 2/3 cupparmesan cheese
  14. ◆◆◆◆◆◆◆◆◆◆◆ Topping ◆◆◆◆◆◆◆◆◆◆◆
  15. 1 cupmozzarella cheese, shredded, more if you like
  16. 2/3 cupparmesan cheese grated
  17. ◆◆◆◆◆◆◆ Frying oil ◆◆◆◆◆◆◆◆◆◆
  18. as neededextra virgin olive oil

Steps

  1. 1

    Preheat oven 400° Fahrenheit

  2. 2

    Peel and thinly slice the eggplant

  3. 3

    Fry in the oil in batches till done

    Move to a paper towel to absorb excessive oil, season each piece with salt. Line the bottom of a baking pan

    Cook the sauce add tomato sauce, garlic, basil, parsley, oregano, sugar, parmesan cheese, salt and pepper. Simmer 15 minutes stirring occasionally.

    Pour the sauce over the eggplant. Add cheese toppings bake 20-25 minutes

    Let sit 5 minutes. Serve hope you enjoy!
