Ingredients

  1. Papaya Chicken
  2. 400 gmchicken breast, cut into bite sizes
  3. 1/2 tspsambal oelek (or to taste) (optional)
  4. 1 tbspolive oil
  5. 1scallion, chopped
  6. 2 clovesgarlic, chopped
  7. 1 inchginger, chopped
  8. 2 cupsgreen or unripe papaya, seeded and diced
  9. 1bell pepper, cut into strips
  10. 1/2 cuplemon or orange juice
  11. 2 tbspsweet soy sauce
  12. 1 tbspshrimp paste or fish sauce
  13. 1 cupbroccoli, cut into bite sizes
  14. 1 cupmushroom (optional)
  15. Turmeric Rice
  16. 1 3/4 cupbasmati rice
  17. (cook with rice cooker or in a pot, following the instructions)
  18. (I use 3 1/2 cup of water)
  19. 1 cupchicken broth (adjust with water for cooking rice)
  20. 1 tbspbutter
  21. 1 tspturmeric powder
  22. 1 tsponion powder
  23. 1 tspgarlic powder
  24. 1/2 tspgaram masala (optional)
  25. Pinchsalt

Cooking Instructions

    Cook rice

    Prepare a pan with oil and sautee scallion, garlic and ginger

  3. 3

    Add chicken along with bell pepper and cook until the chicken turns white

  4. 4

    Add fish sauce or shrimp paste together with lemon or orange juice, soy sauce and sambal oelek. Mix well.

    Add broccoli and papaya (or mushroom) and cook until the broccoli is soft. Make sure to adjust, not to add papaya earlier than broccoli if papaya was already soft before you start cooking it.

    Add salt to taste. My shrimp paste was already salty enough so I didn't add any salt.

    Serve with hot turmeric rice.
