Ingredients

1 hour
3-4 servings
  • Papaya Chicken
  • 400 gmchicken breast, cut into bite sizes
  • 1/2 tspsambal oelek (or to taste) (optional)
  • 1 tbspolive oil
  • 1scallion, chopped
  • 2 clovesgarlic, chopped
  • 1 inchginger, chopped
  • 2 cupsgreen or unripe papaya, seeded and diced
  • 1bell pepper, cut into strips
  • 1/2 cuplemon or orange juice
  • 2 tbspsweet soy sauce
  • 1 tbspshrimp paste or fish sauce
  • 1 cupbroccoli, cut into bite sizes
  • 1 cupmushroom (optional)
  • Turmeric Rice
  • 1 3/4 cupbasmati rice
  • (cook with rice cooker or in a pot, following the instructions)
  • (I use 3 1/2 cup of water)
  • 1 cupchicken broth (adjust with water for cooking rice)
  • 1 tbspbutter
  • 1 tspturmeric powder
  • 1 tsponion powder
  • 1 tspgarlic powder
  • 1/2 tspgaram masala (optional)
  • Pinchsalt

Steps

    Cook rice

  2. 2

    Prepare a pan with oil and sautee scallion, garlic and ginger

  3. 3

    Add chicken along with bell pepper and cook until the chicken turns white

  4. 4

    Add fish sauce or shrimp paste together with lemon or orange juice, soy sauce and sambal oelek. Mix well.

  5. 5

    Add broccoli and papaya (or mushroom) and cook until the broccoli is soft. Make sure to adjust, not to add papaya earlier than broccoli if papaya was already soft before you start cooking it.

  6. 6

    Add salt to taste. My shrimp paste was already salty enough so I didn't add any salt.

  7. 7

    Serve with hot turmeric rice.
