Ingredients

  • 1/2 kgGrated carrot
  • 500 mlMilk
  • 3/4 CupSugar
  • 4 tbspGhee
  • 1/2 cupMawa
  • 1 tbspChopped pistachios
  • 1 tbspChopped almonds
  • 1 tbspChopped cashewnuts
  • 1 tbspRaisins
  • 3 tbspGrated dry coconut
  • 1 tspGreen cardmom powder

Steps

  1. 1

    Heat ghee in a heavy bottomed pan add the carrots and saute for a few minutes until the carrots become lightly soft.

  2. 2

    Add the milk and turn the heat to medium high and allow the milk and carrot mixture to come to a boil.

  3. 3

    Once the milk and carrot mixture come to a boil turn the heat to medium low and cook the carrot halwa until entire milk is evaporated.

  4. 4

    This process will take close to 35 to 40 minutes.

  5. 5

    Add sugar and stir. Sugar would release lot of moisture.

  6. 6

    Cook until half the moisture evaporates.

  7. 7

    Add ghee and stir well.

  8. 8

    Continue to cook until the moisture evaporates and the halwa thickens.

  9. 9

    Add grated mawa and stir well and cook for just 2-3 minutes.

  10. 10

    Add half dry fruits and cardamom powder and mix well. Switch off the flame.

  11. 11

    Serve carrot halwa hot, warm or cold and garnish with rest of the dry fruits.
