First of all soak daal in water for atleast 2hours and roughly grind them in grinder.

Now take one big bowl add maida, salt, Ajwain,pure ghee and make a tight dough with help of water.

Switch on gas keep pan on it and put 4 tbsp.of refined oil put besan and roast it properly add Cumin seeds.Then after a 1/2 minute put both grinded daal and ginger roast them for atleast for 14-15 minutes.

Now switch on gas and and put oil in it and let it be hot. Meantime make small balls of dough roll them 4"-5" and fill two tbsp.of ready masallas and close from top and roll it again with roller now slow down flame put all raw Khasta-Aaloo in it and turn occasionally and fry for atleast 10 minutes.

Best results for crispy Ness will be their if you fry them on slow medium flame.

Now in the same oil you fry all chopped potatoes.Take out all extra oil from Pan and mix all spices. Our chatpatay Khasta-Aaloo are ready.
