Slice the pork ribs thinly, wash them thoroughly, and let them drain.

Heat 2 tablespoons of oil and add the curry paste and 3 tablespoons of water.

Mash and stir-fry over low heat until fragrant, about 10 minutes, or until the curry paste is smooth. If it dries out, add a little water at a time.

Add the sliced pork and a little soy sauce. Do not stir; instead, flip the pieces until they start to cook, then you can stir.

Continue to stir-fry for another 5-10 minutes. If it dries out, add water.

Season to taste.

Add the kaffir lime leaves and holy basil, stir-fry until just wilted, then turn off the heat and serve on a plate.

Note: If you like vegetables, you can add pea eggplants, Thai eggplants, long beans, young peppercorns, or fingerroot as desired.
